Magic Shake and Bake Lamb Cutlets

Yummy Dish in Less than 1 Hour

I'm sure you are looking forward to the coming Easter Day! So, what are you going to make? Prepare a healthy and yummy dish in less than 1 hour with this Magic Shake and Bake Lamb Cutlets recipe.


  • 16 trimmed lamb cutlets
  • 150g snow peas, trimmed
  • 80g baby spinach
  • 150g tub roast tomato, feta, basil and cashew dip
  • 1 avocado, chopped
  • 1 small red onion, thinly sliced
  • 1 2/3 cups panko breadcrumbs
  • 2 teaspoons onion powder
  • 1/4 cup finely chopped fresh coriander
  • 2 eggs, lightly beaten
  • Olive oil spray
  • Extra 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice, plus lemon wedges to serve

How to Prepare the Magic Shake and Bake Lamb

Preheat oven to 180C/160C fan-forced. Line a large baking tray with baking paper. Combine breadcrumbs, onion powder and coriander in a large snap-lock bag. Season. Place egg and lamb in a large bowl. Toss to coat. Add lamb to breadcrumb mixture. Seal bag. Shake until lamb is well coated. Place on prepared tray.

Spray cutlets with oil. Bake for 30 minutes or until browned and cooked through, turning halfway during cooking. Meanwhile, place snow peas in a medium heatproof bowl. Cover with boiling water. Stand for 2 minutes. Drain. Rinse under cold water. Drain. Thinly slice lengthways. Combine with spinach, avocado and onion.

Combine dip, extra oil and lemon juice in a small serving bowl. Serve cutlets with salad, lemon wedges and dip mixture.
