How to Prepare Vegan Desserts

We know you are vegan but of course, we are also aware that you have cravings for desserts. And because chef Elena believes that everybody deserves desserts, here's one good recipe to take advantage of.


  • 250grams avocado flesh
  • 50 raw cacao powder
  • 100grams coconut cream
  • 1teaspoon vanilla bean paste
  • powdered monkfruit or stevia to taste

To Prepare the Vegan Mousse

Blitz avocado, coconut, cacao, and vanilla in high powered food processor or blender until smooth, creamy, and well combined. Add 1 teaspoon sweetener and 1 pinch of salt. Blitz for another 10-30 seconds or until combined. Adjust salt and sweetener to taste.

Chill mixture in an airtight container for at least an hour before serving.

To Prepare Tangelo Jelly


  • 300grams tangelo juice
  • 5grams agar agar powder


Place agar and juice in a small saucepan and gently bring to the boil while whisking regularly.  Once the mixture has come to the boil, remove from heat and pour into the double glad wrap lined square based tin.

Agar sets at room temperature, on the bench top for instance. If you're not using straight away, cover and refrigerate. Turn out jelly and cut carefully into jelly cubes for serving.
